香糯滑順的糯小米粥

產自阿里山鄒族的心美部落的小米,是打手機鄒努力復育的原生種糯小米

「 開水煮小米,冷水煮大米」 是老祖先們流傳下來的智慧,最主要是水滾再下小米才不會沈底黏鍋。


糯小米煮小米粥要先稍微洗去米糠質與雜質即可,泡水半小時,1:10的水,水滾後才下小米,煮至黏糯,米油會在煮粥時釋放不用撈掉,略拌一下就會與米湯混合均勻,冷水可與地瓜或南瓜一起煮,會增加小米粥的自然甜~

小米粥具有健胃的功能,要怎麼煮呢?

1. 小米洗輕輕淘洗二遍,不要太用力,只要洗去米糠質即可。

2. 倒入適量的清水浸泡30分鐘。

3. 水視喜歡的口感一次加足,不要中途加水才可以煮出好喝的小米粥:

📌水:米=100:10(濃)

📌水:米=150:10(稀)

4. 水煮滾後下小米,保存營養(冷水下鍋會清湯寡水不好吃),香味更濃,煮的時候會浮出一層米油,再略拌一下,香味更濃郁,轉小火,繼續煮至濃稠,熄火燜一會。


小秘訣:

📍煮粥時,可加入南瓜丁或地瓜丁一起煮,也可以加入龍眼肉或枸杞,增加自然甜。

📍想吃鹹口味也可以適量放入蔬菜,起鍋前調味,香糯暖胃的小米粥就好了。
